Description

Our Tsubame Chakoshi balances simple elegance with function, giving the familiar actions of sifting matcha and straining loose leaf to a refined air. The dappled, tsuchime (槌目) surface is the result of hand hammering by professional craftspeople and means that no two pieces are exactly the same. This level of artistry for everyday items is commonplace within the area of its manufacture, Tsubame.

Tsubame City (燕市) is located within Niigata Prefecture, about a two hour shinkansen ride from Tokyo. This area’s history of craft tool production started during the Edo Period, about 400 years ago, with the production of Japanese nails. Today, the area calls upon its rich history and inherited traditions to produce all manner of metallic kitchenware. Tsubame City is known for its quality both within Japan and internationally, so we are very excited to be able to offer a few examples of their handcrafted workmanship.

Superb Strainer

I ordered this strainer with the promise of it being an artisanal and high-quality product, a promise that was not only kept but exceeded. In many ways, this is a functional piece of art, the dappled surface being a delight both to look at and to hold, whose texture is most pleasant. The straining function of this chakoshi is unparalleled as well – the fine mesh is unlike any I have seen before and eliminates virtually every clump from the matcha I drink daily, producing a very fine powder that makes for the smoothest of drinks. I was fortunate to get one of these before they sold out and hope to cherish it for a very long time. I eagerly await a restocking of this product so I may gift others the same joy I get in using this chakoshi. Thank you, Sugimoto, for bringing us this magnificent piece of craftsmanship from Tsubame City!
